The most summeriest recipe you ever did see and completely adaptable too! I like mine either topped with burrata or even a simple basil oil... both ways equally delicious and a crispy green salad is the perfect accompaniment.
This can also be enjoyed hot or cold and is perfect in a lunch box as it can be sliced and wrapped up ready to be enjoyed when your tummy starts to rumble!
p.s - The pastry part can be made the night before.
