I love a good carrot cake and I feel like I have finally nailed the perfect recipe! I think the key is soaking the raisins in the orange juice and really whipping that frosting for a very long time to make it deliciously light and moreish!!
You can swap out the lemon in the frosting for an orange if you prefer, both are equally as good as each other and provide the perfect zesty burst to cut through the richness of the cream cheese!
