I can't take credit for this recipe as it's actually my Daddyo's! It was one of my favourite things to eat growing up (typing this made me think of lots of other things he used to cook for us and I must get round to cooking them and typing them up too!) and it's still something we enjoy eating today!
This is super easy to make and the longer you leave the tomato/bruschetta mix to marinade the better it's going to taste! It will keep for up to 3 days in the fridge!
